Chocolate & Peanut Butter Protein Muffins
Chocolate and Peanut Butter have become HUGE weaknesses of mine! I've been craving a Reese's Peanut Butter Cup REALLY bad. This definitely hit the spot!!!
Ingredients:
- 1 cup oat flour
- 4 egg whites
- 2 scoops Vi Protein Powder (that tastes like cake mix)
- 1/2 cup sweetener
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 8 oz berry flavored baby food
- 3 Tbsp. baking cocoa
Filling
- 1 cup low fat creamy peanut butter (or you can use PB2)
- 2 scoops Vi Protein Powder (that tastes like cake mix)
Directions :
- Preheat oven to 350 degrees
- Mix dry ingredients together in a bowl (flour, protein powder, baking soda, salt, cocoa)
- Mix wet ingredients together in a bowl (eggs, sweetener, baby food)
- Add wet ingredients to dry ingredients and mix well.
- Pour the batter into muffin tins.
- Mix the peanut butter and protein powder together.
- Add a dollop of the peanut butter mixture to each muffin.
- Bake 20-25 min in the oven
